Description

I made this the other night and it was super-easy and fab. Especially with curry chicken. I just chopped the carrots thinly.

Ingredients

  • 3 c sliced or grated carrots
  • 1⁄4 c rice vinegar
  • 3 T lime juice
  • 1 T orange juice
  • 1 T orange zest
  • 1 T chopped fresh cilantro
  • 3 T real maple syrup
  • 1⁄4 t red chili flakes
  • 1 c chopped peanuts
  • 1 pal-full of chopped fresh mint

Instructions

In a food processor blend all the vinaigrette ingredients except peanuts and mint.
Wash the carrots with a brush and grate (or thinly slice) into a large bowl.
Add the dressing and marinate for 20 minutes before serving.
Garnish with chopped peanuts and mint.

Man, that sounds good. Thai salads are so tasty. I’ve been really into making Vietnamese summer rolls at home lately

I made a thai cucumber salad, too, and it was delicious but involved something like a half cup of sugar in the marinade, so I’m going to explore ways to lighten that up.  I suppose there’s always SPLENDA.  Ugh.

Monk said ‘There is no wrong note, it has to do with how you resolve it’. He almost sounded like a kid taking piano lessons. I could relate to that when I first started playing the piano, because he was decomposing the music while he was playing it. It was like demystifying the sound, because there is a certain veneer to jazz and to any music, after a while it gets traffic rules, and the music takes a backseat to the rules. It’s like aerial photography, telling you that this is how we do it. That happens in folk music too. Try playing with a bluegrass group and introducing new ideas. Forget about it. They look at you like you’re a communist.
