THAI CARROT SALAD

Description
Ingredients
- 3 c sliced or grated carrots
- 1⁄4 c rice vinegar
- 3 T lime juice
- 1 T orange juice
- 1 T orange zest
- 1 T chopped fresh cilantro
- 3 T real maple syrup
- 1⁄4 t red chili flakes
- 1 c chopped peanuts
- 1 pal-full of chopped fresh mint
Instructions
In a food processor blend all the vinaigrette ingredients except peanuts and mint.
Wash the carrots with a brush and grate (or thinly slice) into a large bowl.
Add the dressing and marinate for 20 minutes before serving.
Garnish with chopped peanuts and mint.

Submitted by dingey on Fri, 07/25/2008 - 12:06pm.I made a thai cucumber salad, too, and it was delicious but involved something like a half cup of sugar in the marinade, so I’m going to explore ways to lighten that up. I suppose there’s always SPLENDA. Ugh.

Submitted by Mr. Jass on Fri, 07/25/2008 - 1:04pm.Mine wifey made a cuke salad last night what had jalapenos (from our garden and consequently ‘nella free!!) peanuts and toasted fennel seeds with a sweetish vinagrette. Twas good, yes.
