Description
I am no damned fan of summer squash. I’ll just be right upfront here. Essentially flavorless, kinda texturally funky, etc. HOWEVER. The summer squash has been showing up in the CSA box and I hate wasting food. I have been giving the zuchinni and tubular yellow bastards away so far, but Tuesday we got a rash of those ADORABLE PATTY PAN SQUASHES! I know it’s basically the same shit in a different package, but I am a sucker for a pretty package. And patty pans look like lil’ nubbly flying saucers. I sighed and looked online and found a recipe that I made this morning and packed up to bring with me to work. Damned if it isn’t actually pretty tasty!
Ingredients
- summer squash
- bn fresh mint
- olive oil
- pn sea salt or kosher salt
Instructions
Take however many lil’ summer squashes you want to use. Slice them super-thin using a mandoline or the broad blade on your cheese grater. I salted mine lightly and pressed them between paper towels for a few minutes to extract some of the liquid. Then drizzle the slices with some good olive oil, toss in a dash of good kosher salt or sea salt, and a handfull of chopped fresh mint. Toss. Eat. Mine was good, after sitting all morning. Mm Mm good. Even for an anti-squash knosher like me.



I’m not big on the raw
Submitted by crappor on Thu, 08/14/2008 - 2:27pm.I’m not big on the raw squash, but I do like myself some summer squash casserhole. UE’s grammom makes it and it’s real yum, so I tried it from no recipe and it was pretty good. Grammom puts squash, pimentos, waterchestnuts, onions, and croutons on top, but I just put sliced squash, onions, and a box of stuffing mix in a dish, then some evoo and water and baked it for a while and it turned out real yummy. Who knew! I do like some squash though. I’ve never had the ufo kind, but I know what you’re talking about.

Submitted by dingey on Thu, 08/14/2008 - 2:45pm.I love the winter squashes and their dense deliciousness, but the summer squash has always been "meh" to me. Too squishy! I think that raw is the way for me to eat it, ‘cause I really dug my lil’ cuppa squash at lunchtime today. I guess it’s all full of good vitamins, too, and it’s low calorie, but i did read that ‘the bad part is that the majority of those calories come from sugars in the vegetable.’ Jeepers! Sometimes I think that basically dieticians want us to feel shitty about anything we put in our bellies.

Submitted by cinnamon girl on Fri, 08/15/2008 - 7:28am.I uaually steam mine, drissle with olive oil and grate parmesan cheese on top. They aren’t too bad that way, they are a pretty bland little deal though.
